Traditionally grown on the slopes of Mount Vesuvius, this ideal sauce tomato bruises easily which means the only way to get it fresh in Alberta is to grow it. Commonly used in cans of tomatoes. Elongated fruit with an average weight of 130g/150g. Medium green colour that reaches the deep red when fully ripe. This is Cynthia’s favourite sauce tomato, famous for its balanced flavor that combines “sweetness, tomatoey intensity and just the right amount of acid”, according to Martha Stewart. This tomato is the original pizza tomato sauce as invented in Naples in the late 1800s. It is still used in Naples’ oldest pizza shop, Da Michele, where it adorns every mouthwatering Pizza Margarita.
